- 4 garlic cloves, minced
- 2 tablespoons soy sauce
- 2 bay leaves(optional)
- 1/2 teaspoon ground black pepper
- 2 chicken thighs or drumsticks(skin on)/pork belly
- 1 whole ripe tomatoes
- 1/4 cup water
- 2 tbsp salt
- In a large pot, combine the water, soy sauce, peppercorns,tomato,garlic and salt. Mix together, add chicken pieces and simmer over low heat (uncovered) until chicken is cooked through and tender (25 to 35 minutes).
